Recipes: Best Western Bean Salad

Dressing
2 tablespoons oil
2 tablespoons lime juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon sugar
Salad
1 can (16 oz.) black beans, rinsed and drained
2 cups cooked corn kernels (about 3 ears)
1/4 cup chopped red pepper
1/4 cup chopped green onion
In a large bowl, combine all dressing ingredients; stir until well blended. Add beans, corn, red pepper, and green onion to bowl. Toss to coat. Makes four to six servings.
