Recipes: Tabbouleh with a Twist

2 cups bulgur wheat
4 cups boiling water
2 cups chopped tomato
2 cups chopped, peeled cucumber
1/2 cup sliced green onion
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon black pepper

In a large bowl, combine bulgur and boiling water. Stir several times, then cover and set aside for 30 minutes. Line a mesh strainer with a clean kitchen towel or o double thickness of cheese-cloth. Pour bulgur into strainer. Gather ends of cloth, and squeeze out as much water as possible. Transfer bulgur to a large bowl. Add tomato, cucumber, green onion, porsley, and mint. In a measuring cup, combine lemon juice, olive oil, salt, and pepper; stir until well blended. Pour over salad, and toss until well coated. Makes eight servings.
