Recipes: Walnut-And-Green-Bean Combo

2 pounds green beans, trimmed
1/2 cup walnut pieces
1 red or yellow pepper, cut into matchstick slices
Dressing
1/4 cup chopped fresh dill
3 tablespoons wine vinegar
3 tablespoons olive oil
1 tablespoon country-style Dijon mustard
1/2 teaspoon salt
1 teaspoon sugar
1/4 teaspoon black pepper
Place green beans in a vegetable steamer; set aside. Fill a medium-size saucepon with water until it's 1 inch deep; cover. Over medium-high heat, bring water to a boil. Place steamer in saucepon (if you don't have a steamer, place beans directly in boiling water).
Cover, and steam for 5 to 7 minutes, until beans are tender. Carefully remove steamer from saucepon. Rinse beans with cool water; drain. Preheat oven to 375°F. Place walnuts on a cookie sheet, and toast for 5 minutes or until golden and fragrant; cool. In a large bowl, combine all dressing ingredients; stir until well blended. Add green beans and red pepper; stir until well coated. Top mixture with walnuts. Makes six to eight servings.
